Orange Carrot Muffins

Ingredients

  • 4 med 
    Carrots
  • 1 1/2 cup 
    Whole Milk
  • 1/4 cup 
    Orange Juice
  • 2 med 
    Egg
  • 2 cup 
    Wheat flour, white, all-purpose, enriched, bleached
  • 2 cup 
    Cornmeal, yellow
  • 3 tsp 
    Leavening Agents
  • 3 tbls 
    Sugar, granulated
  • 1 tsp 
    Table Salt
  • 4 tbls 
    Butter

Directions

1. Preheat oven to 325F degrees.

2. In a large bowl, combine the carrots, milk, orange juice, and eggs.

3. In a separate bowl, sift together the flour, cornmeal, baking powder, sugar, and salt.

4. Slowly stir the flour mixture into the carrot mixture. add the melted butter.

5. Pour batter into greased muffin tins and bake for 30 minutes.
